- Russet Potatoes - 2-3
- Poblano Chile - 1
- Anaheim Chile - 1-2
- Shallot - 2
- Garlic / Garlic Pwdr - 2 clvs / 1/2 tsp
- Olive Oil - 2 TB
- Water - 16 oz / 500 ml
- Salt - 1 tsp
- Lime - 1
Steps
1. Chop potatoes, chilis, shallot, garlic
2. TURN ON BURNER: MED HEAT
3. Add oil, vegetables, salt
4. Cook 3-5 min. Stir
5. Add water. Boil
6. Cook 5-15 min until potatoes are soft
7. Garnish w/ lime wedge
