Fall Comfort – Warm Meals for your Fall Trip
by Chef Corso
Fall can mean many things depending on who you ask. It’s back to school, it’s football, it’s Halloween costumes and of course… it’s Pumpkin Spice Latte season! But for me, Fall is still the season of changing colors, beautiful light and the best way to see those is outside, up close and personal.
Going outside doesn’t stop when Summer ends. In fact, some of my best outdoor trips have happened in the Fall months. There’s less traffic on the trail. The crisp air fills your lungs and the thought of a hot, cozy meal is all too enticing.
As we head into my favorite time of year, here are some great ideas for comfort cooking in nature:
Soup / Stew
Soups and stews are a delightful way to warm up in the crisp night air. They are also very forgiving when cooking. The classics are Beef Stew, Stroganoff and Chili and you can make all of these using real, fresh ingredients rather than a dehydrated packaged meal.
Polenta / Grits
You might not have thought about Polenta or Grits as a camp meal but instant polenta cooks up in 5 minutes and is a blank slate for a delicious bowl.
Try these variations:
Cheddar Bacon Grits
Tuscan Polenta
Tamale Bowl
Dessert
Don’t forget about dessert! It’s a great opportunity to add some seasonal fall flavors to your trip.
Try these tasty options:
Caramel Cinnamon Apple Dip
Caramelized Banana Nilla Wafer Bowl
Fresh Apple Pear Crisp
Get out there. Eat well. Share the tasty experience
